Summer Fun!

This summer has been SO.MUCH.FUN so far!!! It seems like we have just done so much!

Starting out the summer was a very busy weekend... Friday the 15th of June, was Caycen's birthday so we went out to eat with Nona and Papa Ray...

then that Saturday was the Mud Run
go team "FAIRY GODMUDDERS"...

 then Sunday was Chance's 2nd Father's Day.

The next weekend was Baby C's birthday party, which you can read about here.

Then some other fun things we've been doing this summer are going to the park...

going to the beach

...

going to the Savannah Children's Museum

...

 going to eat Frozen Yogurt...

going to Music classes...

going to the play area in the mall
...

going to the pool

...

and just having TONS AND TONS OF FUN!!!

I can't believe I have less than a month left until it's back to work... I don't want this summer to end!!!!

Well, off to make more memories and get dinner ready!

Freezer Meal Fun Days!

One of my favorite parts about the Summer is getting to hang out with the girls more often! I am so excited to Sara and Melissa wanted to start "Freezer Meal Days".

So this is how it works...
All three of us picked our own meal that we wanted to cook and freeze. Of course, we wanted to make sure that everyone likes what we picked though. Then we buy enough of the ingredients to create 3 meals of our recipe so that each of us will have one meal. Some of the meals would call for a 13x9 dish, but since we area ll small families, we could put the meals in an 8x8 dish instead and have two of that meal!

We then meet at one of our houses, then each of us cooks our meal x 3. When we leave, we leave with 3 different freezer meals instead of just one (Also don't forget that we may have two of one meal if we did it in an 8x8 pan).

Why this works so well for us...
All of us are "little" families of 3 (well Melissa will have Brylee VERY SOON), so we really never use all of the ingredients when cooking just one meal. So by cooking for 3 families, we use up all or most of what we buy and it ends up being cheaper that way. Plus we only have to cook ONE meal vs THREE.

I absolutely LOVE doing this!!!! I also love it because I get to hang out with some of my best friends and catch up while being domestic ;)

Here are the recipes we've done so far (click on the image to go to the recipe):

Pesto Chicken Stuffed Shells-

This is the only one I've actually eaten so far. I ended up adding marinara on top of the shells and it was  delicious!!!!! Such a quick and easy meal! You could definitely make more of this one at one time and make several dishes to freeze as well.

Crockpot Teriyaki Chicken-

This smells YUMMY!

Chicken Pot Pie-

Chicken Enchilada Casserole-
(Don't know where the recipe came from so I'm typing this one out...)

Ingredients:
one 16 oz pkg sour cream
one 16 oz jar salsa
one 10.75 oz can condensed cream of chicken soup
1/4 cup diced onion
one 8 oz can chili beans, drained
six 12 inch flour tortillas cut into strips
6 boneless skinless chicken breast halves, cooked and shredded
4 cups shredded cheddar cheese

Directions:
in a large bowl, mix sour cream, salsa, cream of chicken soup, onion and chili beans.
layer the bottom of a 9x13 inch baking dish with 1/3 tortilla strips.
Top with 1/3 chicken, 1/3 sour cream mixture, and 1/3 cheddar cheese.
Repeat layering with remaining ingredients.
Freeze...

When cooking, take out the night before to let defrost, then bake in preheated oven at 350 degrees F for 20 to 30 minutes or until gold and bubbly.

Baked Ziti-
this one smelled SOOOOOOOOO good!!!! Can't wait to eat it!

There were a few more sandwiches and taco pockets that Sara made and froze, but the recipes came from a magazine that she bought so I don't have these recipes. But I did eat some taco pockets last night and they were DELICIOUS!

If you decide to make any of these recipes please come back and share your thoughts! I can't wait to eat all this food!!!! :)

HAPPY COOKING and have a great week!

Love,
Aimes
